Salmon

I like to pack the salmon in brown sugar over night in the fridge. Then rinse it and rub it with a rub and let it sit for an hour or so. Alder is my go to wood for salmon.

Sausage

The newest experiment is sausage. With the purchase of a stainless steel grinder for our Kitchen Aide sausage making has become addicting. There are way too many sources to list for recipes. We use real hog casings for the sausages. So for there have been 4 different versions. Three of which we smoked one slow cooked in the oven at 200 F for 4 hours. That one was a Chinese Sausage with 5 spice powder. They all were YUM.
